Polysorbate 60 is a poly (oxy-1,2-ethanediyl) derivative. It dissolves well in water, ethyl acetate and toluene. It does not dissolve in mineral and vegetable oils. It has a weak, characteristic smell and a slightly bitter aftertaste. The product can be in liquid form or semi-liquid yellow to brown paste. It is a nonionic surfactant with hydrophilic properties. In aqueous solutions at the concentration of approximately 5%, the pH is slightly basic. At a higher pH value, the substance begins to break down. Polysorbate 60 is produced by the ethoxylation of sorbitan. Sorbitan is the dehydrated form of sorbitol, a sugar alcohol naturally found in some fruits. Ethoxylation is a chemical reaction adding ethylene oxide to a substrate, i.e. sorbitan. Sorbitan reacts with 60 units of ethylene oxide, hence “60” in the ingredient’s name. The final step is the reaction with fatty acids from vegetable fats and oils such as lauric, palmitic, stearic or oleic acids.
