Glycerides are esters of glycerol and fatty acids, and they are a group of non-ionic surfactants.The structure of glycerides consists of molecular glycerol with one to three chains of fatty acids attached.
The compounds have mainly hydrophobic properties, which is why they are a component in a mixture with other emulsifiers.Alone, glycerides are useful stabilizers for both oil-in-water and water-in-oil emulsions.Additionally, some of them have a conditioning effect, which is important in their application in personal care products.
